Lentil Soup

Ingredients:
- Olive oil
- Onion, chopped
- Garlic
- Tomato paste
- Cumin
- Salt & pepper
- Chili powder
- Vegetable broth
- Water
- Red lentils
- Carrot, diced
- Lemon juice
- Chopped cilantro
Directions:
- Heat the olive oil in a large pot. Saute the onion and garlic until softened.
- Add tomato paste, cumin, salt, pepper, and chili powder and saute until fragrant.
- Add broth, water, red lentils, and carrot. Bring to a simmer, then cook over medium-low heat, partially covered, until the lentils are soft (about 30 minutes).
- Puree the soup using a blender or immersion blender.
- Stir in lemon juice and cilantro.
