Refreshing Summer Pasta Salad
- 3 cups rotini pasta
- 1 cup cherry tomatoes sliced
- 3/4 cucumber
- Italian dressing
- Salt & pepper to taste
- Bring a small pot to a boil and cook pasta on medium heat for 9 minutes.
- Drain pasta and combine cherry tomatoes and cucumber. *Can customize and add as many or little toppings.* Ex: Olives, mozzarella cheese, smoked sausage, peppers, the list can go on and on!
- Add salt and pepper to taste, drizzle Italian dressing and refrigerate until ready to eat.

Makes 4-6 servings.
Lunch tip: To ensure pasta stays cold longer, place in fridge overnight and serve.
