Refreshing Summer Pasta Salad

This refreshing summer pasta salad makes the best cold lunch! It's so quick and easy, and makes a big batch for meals throughout the week.

Ingredients:

  • 3 cups rotini pasta
  • 1 cup cherry tomatoes sliced
  • 3/4 cucumber
  • Italian dressing
  • Salt & pepper to taste

Directions:

  1. Bring a small pot to a boil and cook pasta on medium heat for 9 minutes.
  2. Drain pasta and combine cherry tomatoes and cucumber. *Can customize and add as many or little toppings.* Ex: Olives, mozzarella cheese, smoked sausage, peppers, the list can go on and on!
  3. Add salt and pepper to taste, drizzle Italian dressing and refrigerate until ready to eat.
  4. Enjoy 😋

Makes 4-6 servings.


Lunch tip: To ensure pasta stays cold longer, place in fridge overnight and serve.
