Egg spam musubi is well known in Okinawa, Japan, and I discovered it only a few years ago when we visited there. It was at a local street market, freshly made, still warm, and I couldn’t wait to take a bite until we got to the beach as we had planned.

It is perfect not only as a snack but also as a great breakfast, and lunch! And I quite often make it for the gatherings because it’s also kids’ favorite.

Ingredients:

  • 1 can Spam
  • 4 pcs Egg
  • 2 tbsp Sugar
  • 2 tbsp Soy sauce
  • 2 tbsp Mirin
  • Mayonnaise
  • Nori seaweed sheets

Instructions:

  1. Make egg omelette - beat the eggs, (add salt, sugar if desired), heat a pan, make 8 pcs of Tamagoyaki style omelette
  2. Slice the spam into 8 pcs, pan fry the both sides, add sugar, soy sauce and mirin and stir quickly
  3. Place a sheet of saran wrap, nori sheet, then spam, mayo, egg, and rice, then wrap the rice using the Saran Wrap
  4. After a few min - 10 min, it’s ready to eat, or cut in your bite sizes
