Leftover Tacos

Turn an easy taco night into leftovers for lunch with the recipe below!


Ingredients:

  • 1 lb ground beef
  • ⅔ cup water
  • Taco seasoning:
    • 1 tablespoon chili powder
    • 1 1/2 teaspoons cumin
    • 1 teaspoon sea salt
    • 1 teaspoon ground black pepper
    • 1/2 teaspoon paprika
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon onion powder
    • 1/4 teaspoon crushed red pepper flakes
  • Shredded lettuce
  • Shredded cheese
  • Sour cream
  • Tortillas

Directions:

  1. Make the taco seasoning in a small bowl and set aside.
  2. Brown the ground beef over medium-high heat in a frying pan, then drain. Sprinkle with taco seasoning and add water. 
  3. Bring to a boil, then simmer for 3 to 5 minutes until seasoning is incorporated.
  4. To pack leftover tacos in OmieBox: Add taco beef to the thermos so it stays hot. Pack with tortillas, shredded lettuce, shredded cheese, and sour cream.
