Ingredients:

  • Chickpea salad:
    • Sautéed chickpeas
    • Vegan mayo
    • Diced sweet relish
    • Diced red onion
    • Finely shredded & chopped carrot
    • Finely chopped seaweed (if you want tuna-like flavor)
    • Dill
    • Mustard
    • Salt & pepper
  • Whole grain bread
  • Sides - chips, pickles, and Mandarin orange

 

Directions:

  1. Combine the chickpea salad ingredients in a large bowl
  2. Refrigerate until chilled
  3. Make a sandwich with the chickpea salad and whole grain bread, slice in half, and pack with fruit and chips.
