Ingredients:
- Chickpea salad:
- Sautéed chickpeas
- Vegan mayo
- Diced sweet relish
- Diced red onion
- Finely shredded & chopped carrot
- Finely chopped seaweed (if you want tuna-like flavor)
- Dill
- Mustard
- Salt & pepper
- Whole grain bread
- Sides - chips, pickles, and Mandarin orange
Directions:
- Combine the chickpea salad ingredients in a large bowl
- Refrigerate until chilled
- Make a sandwich with the chickpea salad and whole grain bread, slice in half, and pack with fruit and chips.
