Nut Free Spinach and Basil Pesto

Ingredients:

  • 1/4 cup olive oil
  • 2 cups packed baby spinach leaves
  • 1 cup packed basil leaves
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 1/4 cup shredded Parmesan cheese
  • 1/4 teaspoon salt
  • Pinch of pepper

 

Method:

Place the olive oil, spinach, basil, garlic, lemon juice, parmesan cheese, salt, and pepper in a food processor or blender. Turn on the machine and blend for 30 seconds. Stop and scrape with a spatula and blend again until smooth. Taste and add more salt and pepper, if necessary.
